The largest increase was recorded in 2014 - by 3.8% compared to 2013. In recent years, the demand for starch in the food industry has actively increased, primarily due to the expansion of its use in the bakery industry, where its use reduces the cost of baked goods , as well as in the production of very popular frozen food.
In 2012-2016, China, USA, Indonesia and Thailand were the leaders in starch sales in the world. During the period under review, China’s share in world sales averaged 32.9%, the US share was about 9.2%, Indonesia’s share was 8.3%, and Thailand’s share was 7.8%. It is expected that China’s share in starch sales will increase, and in 2021 it will be 33.7%. It should be noted that the listed countries are among the five major producers of starch. Thus, for the period studied, the cumulative share of these countries in world production averaged 60.6%.
